Molasses Ginger Sugar Cookies

I thought I would share my favourite cookie recipe for Christmas. These are full of wonderful chewy goodness, rich and delicious. Our favourite Christmas cookie.
Merry Christmas!

1.5 cups shortening (no substitutions)
1/2 cup blackstrap molasses (no substitutions – if you don’t have blackstrap, don’t bother making the recipe – honestly!)
2 tsp. baking soda
1 Tbsp. ground cloves
1 Tbsp. ground ginger
2 cups white sugar
2 eggs
4 cups white flour
extra sugar for sprinkling on top.

Cream sugar & eggs. Add spices & soda. Add flour 1 cup at a time. Dough will be stiff. Roll into balls or drop from a spoon onto a baking sheet. Flatten with a fork. Sprinkle with sugar. Bake @ 350 for 6 – 8 minutes. If you like them chewy, bake only until the edges are very lightly browned & the center will still look undercooked.  Let them cool a minute before removing from the pan. If you like them crispy, let the cookie bake until the entire thing is lightly browned. Careful, though – they will burn fast if left untended. These store well (if you don’t eat them all first!)
